Okay, so I know casseroles are ugly, but this one is so delicious I wanted to share. 1lb taco meat (prepared however you like your tacos) + 4 cups cauliflower rice + 2 cups shredded Mexican cheese. Combine meat, "rice" and cheese, top with an additional cup of cheese and bake at 350 for 20-25 minutes, or until cheese has melted. Top with sour cream, guac, hot sauce, olives, etc.
It looks like melted ice cream but it’s even better...we whipped some @pb.and.me powdered peanut butter up with heavy cream! Add a pump of sugar free syrup if you want some more sweetness. Don’t forget to lick the whisk! I have been snacky af all day and this finally filled the empty pit that is my stomach. 1 tbsp powdered PB + .5 cup of whipped cream made two servings, ~220 calories, 2.5 carbs.

Okay it's about time that I talk about this.....
I've been struggling hardcore to stay on track. Like, im so far off the tracks that my train has crashed and burned to the ground. I've been so unmotivated and have had such lack of self control that I can't get and keep my shit together.
For over a month I've dealt with binging issues at night, most nights, sometimes keto foods, sometimes non keto foods. I would be great all day, track my food and everything, and then after dinner all hell breaks loose.
I've had a few full on cheat days lately.
I just keep having that "tomorrow is a new day and I'll be better then, but today I'm going to finish this cake" mentality.
I tried my hardest to be disciplined this week starting on Monday, and I did great... until yesterday. I planned to cheat yesterday, only because I've had plans for friends to come over specifically for beer pong 🍻 👀
My weight has fluctuated so much the last couple months because of all this, I've basically just been maintaining around 174. (Thankfully I'm staying around maintenance and not gaining 🤞) I've been super busy lately so I haven't been to the gym in weeks either.
One of my biggest issues I think also, is that I've been so busy, I've hardly been on Instagram at all. And it's all of you that motivate me the most, so with hardly being on here I'm getting no motivation 🙃
Anyways all of this is just to say that I'm struggling BUT I'm not giving up! This is real. This is hard. I try to show the good and the bad.
I'm off work tomorrow (yay holidays!) So I'm going to meal prep a ton and plan out everything and set myself up for success this week. My biggest issue will just be after dinner, so pray I have the strength to just say NO and take myself to bed 🛌

I’m still vibin’ from the egg roll in a bowl. Pretty much made lo mein with my @nasoya pasta zero! First time trying it and I’ll definitely be purchasing it again.
Cut up a chicken breast and sautéed it with some ginger and garlic. Added noods, soy sauce, and some cole slaw mix. Cooked for a bit and then topped it off with some chives.
I’m far from done and unfortunately this wasn’t my biggest, I had already lost about 25 lbs but I’m starting to feel the changes ❤️
