Good evening. Tonight’s dinner is baked wild salmon seasoned with @kouzinifoods olive oil, lemon and @primalpalate seafood seasoning with roasted asparagus, tomato topped with provolone, grated parm and gluten free breadcrumbs and lemon Parmesan cauliflower with toasted pine nuts. President’s Day breakfast was on point 👌🏼 .
Scrambled eggs with red onion, tomatoes, cilantro, scallions, @koppertcressusa rock chives and sriracha with gluten-free cauliflower pancakes! .
I made these cauliflower pancakes at work the other day and they’re lifechangingly delicious!
1 cup cauliflower rice
1/4 cup onion, minced
3 tbsp cornstarch
Salt & pepper
Mix all ingredients then pan-fry until golden brown in a lightly coated pan with oil. Voila!

Parmesan Crusted Cauliflower | 4 – 5 as a side
1 large head of cauliflower , firm not old and floppy
2 1/2 tbsp olive oil
Oil spray (I use olive oil)
Finely chopped parsley , for garnish, if desired
1/2 cup / 50g grated parmesan , the sand-like type
1/4 cup panko breadcrumbs
1/2 tsp EACH dried thyme, paprika, black pepper
1. Preheat oven to 200C/390F (standard) or 180C/350F (fan/convection).
2. Mix Crust ingredients in a small bowl.
3. Break cauliflower into large florets. Cut very large florets into 1.5cm / 3/5" thick slices, and the medium florets in half.
4. Line a baking tray (30 x 40 cm / 12 x 16") with paper.
5. Drizzle tray with oil. Use a cauliflower to spread the oil all over the paper (see video).
Sprinkle Crust mixture all over the tray, as evenly as possible. Place cauliflower down on the Crust mixture, pressing down lightly. Don't jam them right up against each other (they will steam and go soggy), keep a tiny bit of space between each one.
6. Spray generously with oil. Sprinkle with a bit of black pepper (optional).
7. Bake for 20 minutes until crust is deep golden.
8. Use tongs to turn the cauliflower so the crust side is up. Bake for a further 5 minutes.
9. Serve immediately, sprinkled with finely chopped parsley or other herb, if desired.

#vegan scrambled eggs salad🙌😋 So freaking delicious!! For this recipe, you only need 3 main ingredients : grated cauliflower, onions and mushrooms. Add the onions and mushrooms in a pan and stir for about 3 minutes. Then add the grated cauliflower rice, a lil bit of water and spices (here I used Himalayan salt and curry powder). Stir for another 3 minutes and that's it! You can serve it with a fresh salad. So tasty!!
