How #delicious 🙆🏻♀️👅does this hearty plate of #Chicken Mee Goreng and #Cheese (for AED 49) from Lets Wok @letswok_uae look? With layers of noodles🍝, chicken strips🍗and topped with #sunny side up #egg 🍳, spring onions, #shredded cheese 🧀 and sesame seeds how can any dish go wrong? 🤹🏻♀️🤹🏻♀️
For those of you looking for something a little exotic for dinner here’s another quick, simple and tasty weeknight meal. This red curry is made with our favourite Mae Ploy paste and put together in a similar way to the green curry posted last year. The addition of ginger and Fresh Thai Basil really hits the spot. Here's our recipe for two (depending how greedy you are 😋there should be enough left over for lunch): .
Two chicken breasts (you could use tofu)
1 2inch pice of ginger finely chopped/grated
1 large aubergine
80g green peas or sweetcorn
2 tbs Mae Ploy Thai red curry paste
1 tbs fish sauce
2 tsp brown sugar
Juice of half a lime
1 can of coconut milk
1 2inch block of coconut cream (for extra richness)
A handful of Fresh Thai Basil Leaves .
1️⃣Finely chop the ginger and add to a large pan with a little oil. Cut the aubergine into 2cm cubes and when the ginger starts to release its fragrance add them to the pan. Cook for approx 5 minutes on a medium heat and with the lid on. The aubergine should soften and may brown a little.
2️⃣Whilst the veg is cooking thinly slice the chicken breast or tofu. The thinner the better. Push the veg to the side of the pan and add in the curry paste and a little water. Fry the spices for a minute or two and then add in the coconut milk and mix.
3️⃣Add the fish sauce and sugar and mix. Add the coconut cream and then add the chicken/tofu and peas and place the lid back on the pan. Cook on a medium heat for 15 minutes. Half way through, mix the chicken and peas into the sauce. The coconut milk should take on all the lovely spices from the paste and the chicken and peas will cook in the steam.
4️⃣Add the lime juice. Taste at this stage and make any adjustments. Add the Thai basil, mix and cook for a minute. The curry is ready to enjoy. Best served with jasmine rice.
We like our curry thick and full of veg! However if you prefer a lighter less filling curry, reduce the quantity of veg and add more coconut milk. .

- Roasted carrots and delicata squash (tossed in olive oil, salt and pepper then roasted at 400 degrees for 5 minutes), grilled chicken breast, sautéed cauliflower rice (in salt and pepper), green onions, sprouts and everything bagel seasoning.

Obviously I would never, but this is still hilarious 🤣😂😆. Also for some reason this guy reminds me of my all time favorite actor/comedian, the late, and greatly missed 'Cantinflas' only my Latino peeps know how great he truly was. .
(Cantinflas was a Mexican comic film actor, producer, and screenwriter and an iconic figure in Mexico and Latin America 💚)

Chicken Tomatillo Soup is a slow cooker soup filled with awesome protein: chicken, beans, and cotija cheese!! 4 boneless chicken breasts, thawed
1 onion, sliced
1 jalapeño, sliced
2 cloves of garlic, minced
1 (12 ounce) jar of tomatillo salsa
1 (14 ounce) can of black beans
1 tablespoon lemon juice
1 teaspoon sea salt
1 teaspoon pepper
1 teaspoon oregano
1 teaspoon cumin
4 ounce cotija cheese crumbles
Spray the ceramic insert of slow cooker with cooking spray.
Turn on, add all ingredients; stir.
Cook on high for 3-4 hours, low 6-7 hours.
Shred chicken and serve with a sprinkle of cotija cheese crumbles and tortilla chips.
