I am not a morning person. When I wake up, the only thing that is on my mind is coffee! I have my oats prepped with cinnamon and stevia. All I’ll need to do is add almond to milk(in the bottle)and cook when I get to work. I can add my banana and eat at my desk. Whole 30 Round 2 Day?
I don’t know what day it is on round 2 Whole30 because it’s become a lifestyle vs. a program. The shift around about week 5 was uncanny. Old trigger foods turned into yawners. Occasionally when I feel stressed I still shift into old habit mode, but THE AWARENESS that it’s happening creates a whole different shift in mindset. I’m not controlled by sugar like I used to be. It seriously the coolest thing!
I’ve had several new clients reach out to work on their mindset, their values, and their new way of wanting to live! It’s pretty amazing really! Once you step up to the best version of you, doors fly open and the Universe works to make it happen.🦋
Today’s desert: mini cheesecake with whipped cream & strawberries 🍓 ABSOLUTELY delicious & exactly what I needed after dinner. I got the recipe from @tasteaholics (there is a super easy recipe on YouTube from their page) This recipe was a total win with my kids and hubby, they all asked for seconds! Super clean meal tonight... Brown rice fresh green beans and dover sole with lemon olive oil and salt and pepper. Feels so good to eat this. Day one of my sugar detox... N for those of you who say theres no such thing as detoxing the body. I say try getting off sugar... I am a sugar addict and my cravings and binges have been comparable to a drug addicts. Look what I found at Smith's! I'm so excited about it. I've missed chocolate milk. There's 6g of carbs per serving. Not great if you're keto, but a good choice if you're low carb. It's really good, too.
Baked sweet potato fries, red pesto & smashed avocado by @missmarzipancom 💛
For crispy sweet fries:
3 large sweet potatoes
2,5 – 3 tbsp cornstarch (approximately 1 tbsp of starch per potato, depending on potato size)
Organic olive oil (I used a mister, but allow for at least 2 tbsp of oil regardless of application method)
Preheat oven to 200°C (fan).
Peel and slice sweet potatoes uniformly (you want a matchstick-style shape, as opposed to a wedge).
Place sliced potatoes in a large bowl, cover with water and place in refrigerator .
Drain and rinse the fries, then lay them out on sheets of paper towel to dry, blotting with more paper towel to remove remaining moisture.
In a large bowl, toss potato slices in corn starch to evenly coat.
Arrange potatoes on a greased sheet of baking paper on a baking tray. Do NOT over lap the fries. Don’t even let them touch each other. This is one of the crucial keys to a crispier “baked fry”.
If you have one, use an oil mister to evenly coat with oil, otherwise a light drizzle and good shaking in a large bowl can do the trick.
Bake the fries for around 10 minutes. Remove tray from oven, turn fries and then bake for approximately another 15 minutes (until the edges are browning).
Season well/to taste with salt, pepper and paprika if you like.
Serve immediately. *All ovens have their own “personality”, so you may want to try adjusting your oven temperature if you notice your fries browning too quickly … or the baking time if they haven’t browned enough after 25 minutes.
For Red Pesto
150 g marinated sun-dried tomato halves in oil (approx. 24)
90 ml oil reserved from jar
A handful of basil leaves
1/2 tsp garlic powder
1/2 tsp onion powder (optional)
30 g pine nuts (approx. 5 tbsp)
1 tbsp balsamic vinegar
1 tbsp white/red wine vinegar
Blitz all ingredients in a small food processor until desired consistency is reached.

I mixed in some Greek yogurt, a squeeze of lime and topped with fresh cilantro. I was able to make it ahead and reheat the leftovers for later. Delicious, cozy and convenient! It’s basically two ingredients: frozen bananas (about six - however much you want to make), frozen blueberries (about 1/2 cup), splash vanilla, splash almond milk. Sneak some hemp hearts or ground flax for hidden nutrients! Comes out beautifully in a high powered blender but I think it would be easier (less labor) to use a food processor.
