Presently eating a Taco Salad because I only ever want to eat tacos 🌮 but I also have commitment problems, so I need variety. Mixed up my @organicgirl spinach + cucumber 🥒 + avocado 🥑 + corn 🌽 + tomatoes 🍅 + @goodwaterfarms microgreens + Red Onion & Jalapeño Avocado dressing from @wholefoodsnyc 👌🏻 loved hanging out with the @goodwaterfarms founder last night at the @thefeedfeed event! I had this one lonely apple left over. It is there for days and nobody would eat it because it was the last apple in the fruit bowl. so I decided to mulitiply and made 9 #delicious#cookies from it and still have a little of the Apple left over. We almost eat all of them at once. THEY ARETHAT GOOD. WOW! Now A recipe is born out of this one Apple. Sometime all you need is one lonely apple🍎. You can turn lonely into happiness but you have to be creative. LOVE YAHW LOVE YOUR NEIGBOUR ❤.
#instantpot success! Hard boiled eggs peel SO much easier! I did 6 minutes on manual, 6 minutes natural pressure release, and then put them in an ice water bath. (Recipe from my amazing Mama friends ❤️)
Today was freezer meal day!! My sister in law and I made 14 meals each in under 2 hours! Wait, it gets better it costs us $120.00 each! That means it costs us $8.50 per meal; you can't even go to Del Taco for that cheap!! Score! 🙌 Another bonus for some of you following me is that these meals are all GLUTEN and DAIRY FREE!!! Fried or baked sweet potato fries topped with wilted creamed spinach. I say “wilted” because you don’t want to sautee spinach into mushy oblivion.
You can use a ratio of 3 cups of fresh spinach in one cup of coconut milk with salt and Italian seasoning. If you eat meat, top with blackened chicken, or shrimp (get the skin crispy and you’ll thank me later 😉). This is SO filling.
I blacked shrimp in EVOO seasoned with kosher salt, fresh lime juice (or orange juice), and fresh cracked pepper or cayenne or both.

Well, as you can see from the re-enactment of events above, my biggest clue was that #bloated belly. I was constantly feeling awful, I was tired all the time, and I did get sick from my symptoms. My migraines that I had “solved” 2 years ago suddenly came roaring back into my life with a vengeance. I was ornery all the time, because I was sick, but also hungry all the time. .
Special note to my friends and family: thank you for putting up with all of these symptoms! And my frustrations! .
I knew, in my heart, that this wasn't my normal. Even when multiple medical professionals diagnosed me as "fine" and "normal". I knew I had to fight back. The best thing I did for myself? Ignored the docs and found someone who actually listened.
My partner is back from travel and I was stoked to whip up a new soup! Cauliflower Potato Soup with roasted chickpeas/cauliflower!
