Perfect vegan sugar cookies! One of my favorite cookie recipes. 🍪 🌱 ....………………...........
1 cup of softened vegan butter (earth balance)
1/2 cup of white sugar
1/2 cup of brown sugar
1/4 cup of grape see oil
1 tsp of vanilla extract
1 3/4 of all purpose or gluten free flour
1/2 tsp of salt
1/2 tsp of baking soda
1. Preheat oven to 350 F
1. Flour, salt, and baking soda together. Set aside.
2. Mix the rest of the wet ingredients and sugar together.
3. Slowly add dry ingredients to wet ingredients until it is completely mixed.
4. Place in freezer for 5 minuets or until firm.
5. Roll dough into balls and dip them into white sugar.
6. Place onto baking sheet and press flat with a fork.
7. Put into oven for 14 minuets, turning sheet 180 degrees halfway through.
8. Take out and enjoy!

Five ingredient vegan peanut butter and coconut oatmeal cookies! All natural cruelty free goodness. ...............................................................
1 cup of earth balance peanut butter & coconut blend
1 & 1/4 cup quick oats
1 cup of packed brown sugar
1/4 cup of grape seed oil
1/2 teaspoon of baking soda
1. Preheat oven to 350 F
2. Mix all ingredients together
3. Squeeze together about a tablespoon of dough in hands and flatten between palms
4. Place on baking sheet and into oven for 6-8 minuets
5. Take out and enjoy!
Chocolate Protein Pancakes! This is definitely a rare occasion! 🥞 1 cup GF flour, 1/4 cup chocolate protein, pinch of Himalayan Pink Salt, 2 tbsp maple syrup & 1 cup water. Mix dry ingredients together first, add maple syrup and slowly add 1 cup of water, do not over mix! Add more water if needed. It will look kind of chunky. Cook until top starts to bubble, then flip! Top with @earthbalance & maple syrup 🤤 not bad!
Coming from someone who grew up having a full, all-American southern breakfast almost every day, becoming vegan put a large haul to that (my heart is probably thanking me). But, we’d have bacon, eggs, biscuits with gravy, and my personal favorite, grits. Grits have always been one of my favorite breakfast foods. So, as I’ve done before, I made a bowl of good ole grits this morning. But I definitely dressed it up with some yummy vegan “fixins”. So, I made my grits, and sautéed some baby bells mushrooms, onion, sweet potato, mixed greens, and baby bell peppers in coconut oil. And to the grits I added about 1 tsp of #earthbalance butter spread, about 1 tbsp of pepper (I know, WTF. But ya girl has an addiction to pepper), and a little under 1/4cup #daiya mozzarella shreds. Then, I topped (and mixed a little in), with the sautéed veggies. A++, pat myself on the back, 10/10. Hearty T&A Soup! (😂 Troy & Amanda)
I came up with this recipe because of Troy's desire to start limiting gluten. "I want something hearty and filling, if I'm not gonna do pasta. Can we make a kale soup?" So we went to the store and grabbed:
1 container #vegetablestock
2 bunches #kale
1 bag small yellow #potatoes
2 cans #whitebeans
2 yellow #onion
2 bulbs #garlic
2-3 inch piece of #ginger
The kale and stock and beans were organic, but the rest of the ingredients were conventional due to lack of availability.
All of this went into the soup, Troy prepped the vegetables and I supervised. We added the stock to a pot and filled the soup container with water, adding it to the pot also (50/50 stock to water). First the onion was diced and the garlic was minced, added to the pot before it boiled. Then we added the potatoes (cut to small cubes), and Troy had some Mrs. Dash lying around which seemed pretty safe. The potatoes were about half done cooking we added the canned beans with some of the liquid they came in. The kale was chopped up and added, destemmed, along with 3-4 T of soy-free #earthbalance we had at the house. I added 4 T #tahini to thicken up, 4T #soysauce and allowed it to come down to a simmer. We avoided overcooking the kale, finished with #himalayansalt and #rainbowpepper ! The flavor is awesome. When we served ourselves we added a little #habañero hot sauce, which was tasty too. It was just enough to add flavor without being too spicy.
This will definitely be a family staple. We also talked about adding mushrooms next time. I added a little udo's oil to my bowl, because of the dha for the baby. 4.5 months today!
#Tatertot casserole for dinner and movie night. Frozen mixed veggies, frozen beans and frozen ground "round" with French onion soup seasoning poured on top. I made a roux with #EarthBalance, flour, lots of almond milk to which I added garlic powder, onion powder, basil, Hungarian paprika, poured over the veggies and mixed so everything was nice and creamy. I used one bag of tater tots, and it was delicious, with the roux bubbling up around the tots. #WhatVegansEat#SaturdaynightDinnerandaMovie 🍜🍃💜🍃

Quick not fancy pic of BK ... 1/2 cup berries , 1/2 cup brown rice ( GF) Farina, GF toast, #EarthBalance spread ... I dripped a little excess butter spread into my farina ... also I stirred in 1/2 teas Truvia Nectar ( has 1/2 honey in it) for a hint of sweetness and a sprinkle of cinnamon for some love action. #toagreatday
