Easy cheesy after school snacks perfect for this day of cooler weather (finally!) They're cheap and easy and the ingredients are basic and we all generally have these at home anyway! Perfect! To make these babies you need some puff pastry (1 sheet makes 6-8 depending on how thick you cut them), some of your favourite pasta sauce or pesto (I've used @barillaaus napoletana because it has no nasties, it's gluten free and tastes great-not a sponsored plug I just love it) and some shredded mozzarella cheese.
Defrost you pastry and lay it flat. Next spread with some sauce and sprinkle with some cheese. Roll it up and slice into desired snack sized portions and lay scroll side up on a baking tray. Sprinkle a little more cheese on top and bake 180 degrees until the cheese has gone all nice and gooey and golden and the pastry is crisp. To finish garnish with some fresh chopped parsley or chives (or nothing if you have little ones who don't like green things 😂) and serve with some fresh fruit or chopped veggie sticks for a balanced snack!!! So good you will absolutely go back for seconds 👍❤️ These also make a great morning tea snack for little ones too! When you find out your fave nutrition company is releasing a limited edition MOCHA ☕️whey protein shake tomorrow, you set an alarm to order a canister or two (or six🤣) and tell your friends in case they too want a one-step, 2 minute brekkie or post-workout meal option that doesn't break the calorie bank. Are you that friend??!! If so let me know and I'll get you hooked up😉. I've been concocting my own mocha shakes for months by making coffee first and then adding it to my chocolate shake powder so this just further simplifies my already super simple breakfast routine😂. I'm considering this my Monday win🏆.

Sweetcorn & Spinach Dhal that was in @the.independent today. Mega low on inspiration and fresh produce so I did what I was telling everyone else to do and made it. Low maintenance and luscious. With a kick of turmeric goodness for any bugs and anti inflammatory genius. It’s on Stories. With broccoli not spinach. Because Monday 🤷🏼♀️ And like Frances McDormand I’m not great with compliance. 🙅🏼♀️

#EasyMondayEats 🙌🏾 thrown together burrito bowl of produce-drawer-leftovers & cans-from-the-cupboard. 💡I wanted a bit of warmth to mine so I sautéed onions + [ drained and soaked with splash of apple cider vinegar for 15 mins ] canned black beans with cumin/coriander/cilantro/cayenne/salt/pepper 💡while the beans/onions cook slice your veg (cukes, peppers, tomatoes, avocado, etc) & toss with lettuce + cilantro then drizzle olive oil and either red wine vinegar or freshly squeezed lime juice over top w/ salt + pepper to let the dressing seep into the veg for more flavour come EATING TIME ‼️💡if you wonder why homemade bowls like this sometimes don't "taste as good" as ones you buy out, it's probably because we undersalt/underdress ours at home. Feel free to add a bit more salt + dressing than you usually do to help mimic the tastiness of restaurant-bought ones but for a slice of the price 😉 💡concern yourself with overdoing it on salt from fast foods, convenient foods, store-bought prepared goods etc. Salt we add during home cooking and on the table isn't the bad guy 🙅🏻 you want it to let flavours shine 😘

Have the dread lurgy now & can't taste much, but The Husband seemed to enjoy this 😎 Cooked 6 boneless chicken thighs in the slow cooker for 5 hrs on low w/ low sodium taco seasoning & a jar of medium-hot salsa. When done, shredded the chicken & served it over rice w/ cheese, lettuce, tomatoes, & guacamole. 🌮🍚🥑🍅🧀

This cauliflower rice has been my jam for the past few weeks, (a) because it’s so friggin simple and (b) I’m a carboholic and I can’t even notice that I’m not eating grains!
All this has in it is: frozen cauli rice, mixed veggies, and shrimp from @traderjoes , two scrambled eggs, and some mushrooms! Seasoned with garlic salt and powder and BAM we good 2 go!
Not pictured but also part of my lunches this week are my steamed green beans, energy bites, tuna salad, and @perfectbar !

This whole account is embar but this next post is the most embar yet, you’ve been warned!
I finished my first Round of #Whole30 yesterday (tech am still going, more on that) and wowee wow what a way to kick off the year?! 🌝
I’ve always struggled with cycles of restriction turning to bingie-ness turning to skipping a meals and obsessing over calories — not quite an eating disorder but defo a complicated relationship with food mixed w some disordered eating, so I went into Whole 30 hoping to #attack that
Also was hoping to shave a couple lbs if I’m keeping it real... 😌
At the beginning I faced a lot of doubts about the seeming pseudoscience surrounding Whole 30, the lack of studies, that one report calling it the worst diet of the year that it seemed like every single one of my friends was sending me.. BUT I figured the key tenants certainly couldn’t hurt as long as I was getting enough carbs, and baby do I love a sweet potato
Aaaaanyway, 30 days later and I’m sleeping better (if not more, I avg 5-6 hours a night, which I’m sure delayed the 🐯💉 somewhat..), feeling energized, and looking toned (and I KNOW it’s not been from working out more bc I’ve been slacking)
I’ve also had some days where I’ve caved at 4pm at work and copped that sweet sweet no sugar added dried mango from the Duane Reade, maaaay have leaned a little too hard on black cold brew for a time, and have had some long dark nights of the soul between myself and TJ nut butter, but if I didn’t still have anything to work on I’d be bored, right?
Bottom line — I feel more regular and in control with my eating, and barely think about calories. There’s something about seeing exactly what I put in my meals, maybe knowing the cals come from a good place? I don’t know, it’s a process. AND I’ve taught my millennial ass how to shop, cook, and meal prep. 🏅
I’m feeling like a winner and a powerful witch and can’t wait to see where continued paleo takes me.
For now tho, we’ll see what the meal worth breaking Whole 30 for will be...
