Ermagerd!!! 🤬 I was so friggin sore last week that I had to take my rest day on Friday. I could barely move my arms!!! So I stretched & foam rolled like crazy! #selfcare ❤️ .

It’s no secret that meat is expensive and eating too much of it is not good for you either. I try to structure our meal plans by alternating a meat-based dinner with a plant-based one each night, which means we still have animal protein each day when we have leftovers but are not consuming meat at every meal. I’ll be honest, this was much easier to do when we could all eat dairy but I’m slowly getting used to making vegan meals. It definitely reduces our grocery spend and I feel much better eating more plants. When we do eat meat I usually use cheap cuts as I prefer to buy higher welfare meats (grass-fed, free range and organic) than conventionally farmed and fed animals, but this is of course more expensive. Matthew Evans (the Gourmet Farmer) made a great series called ‘For the Love of Meat’ which hugely influenced my way of eating and I highly recommend watching it. Cheaper cuts are usually tougher cuts which require slow and low cooking, but I think that little bit of effort is so worth it. I also find it a really easy way to cook because once you’ve got a slow dish on, you are free to do other things!

Feeling lots of new feelings recently, and for that I am grateful 💜💙
I had a wonderful day today. First I went to Adat Chaim for Shabbat. We had an awesome time of worship. Peter brought an dynamic word on broken hearts and struggles. There's a purpose for the pain we go through and God is able to make all things work together for good. Brother Craig also encouraged us to not condemn ourselves for things we did in the past and live with a renewed mind. I made bean and lentil stew for the potluck and everyone loved it.
Then I went to visit my parents. Mom made another noodle bowl with potatoes, broccoli, veggie burger, and marinara with toast and fruit for dessert. It was savory and filling. We all watch Okja on Netflix. It was a touching movie.
Finally it was off to King's Fire to see Bob Sorge. He gave a powerful message on chastening. God chastens those he loves and desires to help us deal with our issues. He also wants to bring us to a place of healing so he can take us to our destiny. This was an amazing Saturday.

BLUEBERRY LEMON SCONES!
If you guys aren’t big on baking but wanna try something out, I suggest you try scones. They’re super quick and easy and absolutely delicious! You can mix in whatever you want but this flavor combo is definitely one of my favs 💙
P.S. The @phxveganfest today was such a blast! I met a few Insta buddies, saw some old high school friends, and my goodness did I stuff my face with some amazing food. Most of what I ate is on my story if anyone cares 🤤
Enjoy my recipe & let me know if you make them!
1 tbsp ground flaxseed
3 tbsp water
3/4 cup soy milk
1/2 tsp vanilla extract
2 cups all-purpose flour
1 tbsp baking powder
1/4 cup sugar
1/2 tsp sea salt
1/4 cup + 2 tbsp vegan butter
Make a flax egg by combining the flax & water. Stir and put in the fridge to thicken.
In a large bowl, combine flour with baking powder, sugar and salt. Whisk it together then cut in the butter either with a fork or pastry cutter until small pieces of butter remain. Don’t overwork it so the butter doesn’t melt.
Get your flax egg and mix it with the soy milk & vanilla.
Pour the wet mixture into the dry and gently stir it in until just combined.
At this point mix in whatever it is your little heart desires.
Flour a clean surface and throw your mixture on there.
Flour your hands and create a flat circle like an inch thick. It’s gonna be sticky so just cover it with flour then use your hands to form the circle. Remember, don’t overwork it and definitely don’t knead it.
Cut out your scones whichever way you prefer. My fave is cutting it like a pizza, into 6 triangles. These are gonna be kinda big so if you wanna make smaller ones just cut each of those triangles in half.
Gently transfer onto a baking sheet and bake at 400° for 25 minutes or until golden brown.
Make a quick glaze by mixing like 1/2 cup powdered sugar with like 1 tbsp soy milk and a smidge of vanilla. Add more liquid if you want it to be thinner. You can also omit the vanilla and replace most of the milk with lemon juice to make a lemon glaze. It’s science, just experiment and find what you like. Enjoy! 😊
I use my meal plan to help me stay on track because otherwise I’d eat half a jar of almond butter in a sitting. Not every day is perfect (nor should it be) but my meal plan is here to help me not feel like shit so I’m cool with it.

Earls for lunch today 🙌🏼. @earlstinpalace doesn’t have any vegan menu items as is, but if you get creative like I did there are a couple of options! I ordered the Warm Kale Chicken Salad without the chicken and cheese, add tofu and sub the champagne shallot vinaigrette instead of the brown butter vinaigrette. It was super tasty and filling 😊✌🏼 #vegananywhere
A little #realtalk for your Sunday morning. As women we are genetically programmed to nurture and serve others, often feeling guilty to nurture ourselves... because ... washing, cleaning, vacuuming, kids, husbands, toilets, dinners aren’t going to look after themselves. Or so we think. The truth is, it can and will go on without you, you just have to surrender, ask for help or do it later. This powerful lesson hit home hard after my friend Michelle from @minimodesignco, a serial multitasking super mama, doing it all with two little boys in tow, had to literally stop everything after she had TWO heart attacks within eight days. The result now is a long recovery and being forced to accept help at home as her body heals over the next 12 months. This hustle and grind, can’t stop, won’t stop and keeping up with the Joneses mentality has to stop. It’s ok to have a slow day and feel like you haven’t achieved anything more than getting up and showing today. Life is too precious. I choose to fit my own oxygen mask first and urge you all to do the same. You can’t help others, without helping yourself first. So today I am busy doing me. Unapologetically taking a few hours to serve my mind and body with yoga, a trip to the beach and a good book. #selflovesunday

Not your body. Not your choice. ❤️ Eating animals isn’t a necessity for humans and there for it is cruelty. Killing when not required for safety or food.. that is unethical. ❤️ When I went vegetarian 25 years ago there were no vegan alternatives, it was a matter of eating what you get and asking for no meat or dairy... or pulling it out. Which even though that option is healthier for me, it doesn’t always help out the animals. Now we have a choice to eat absolutely whatever we desire, cruelty free options for everything. ❤️ Today we made vegan jelly. Neither of us are into eating jelly but we are gifting this to our friends who will appreciate it. ❤️ Check my IG story for the ingredients of actual jelly.. 🤢🤮

Salted caramel peanut butter pancakes 🥞 3 ingredient cakes topped with banana, strawberries, coconut and smothered in caramel + pb. For the pancakes, just blend up 1 cup of oats into a flour, then add in a banana and 3/4 cup almond milk. Throw in whatever add-ins you want, like cacao for a chocolate stack! Appropriate for any meal of the day in my eyes 👀
