Adding some color to this otherwise gray day by eating the rainbow! Rainbow Quinoa Stirfry: Red bell pepper, carrots, baby corn, bok choy and purple cabbage stir fried with ginger, sesame seeds and garlic plus my favorite sauce: 2 parts sesame oil, 1 part liquid aminos, 1 part coconut sugar and calamansi or lemon juice to taste 🌈 Top with fresh cilantro for your daily dose of antioxidants! 🌱 #eatyourcolors

I was never good at portion control. I love food! 💁🏼I always "ate super healthy!" But ALOT!! Guess you CAN have too much of a good thing (especially when my portions were the same as my husband's)! 😳😳
It's definitely taken me a long time to learn the "right things" to eat, what macronutrients should be paired together for maximum benefits or to prevent blood sugar drops, and the best foods to eat at certain times of the day - for me & my body, ☝🏼everyone is different. 👯
So, implementing this new concept of "timed nutrition" based around your workout, is very foreign to me!! 💁🏼 Yes I knew "balanced" and "protein/carbs" post workout, but quite honestly I was a bit nervous about being on point with this, especially around our 3 boys' crazy, unpredictable schedules!! 🌀🌀🌀 But what I can say is, it's A RELIEF!!! No more standing in front of the fridge wondering what to eat or questioning how much is too much!! 🙏🏼 All of the guess work has been done for me!! More energy & Less choices for this busy mama to make = #winning !!! 👊🏼🔥

Tuscan Bean & Vegetable Soup + Herb Bread
Perfect for impending snow and below 30 temps!
Ingredients: cannellini beans + carrots + onion + garlic + zucchini + celery + tomatoes + kale + thyme + rosemary + salt/pepper + red pepper flakes + vegetable broth + cashew parmesan
TIP: Instead of dicing the vegetables simply rough chop them and let your food processor do the work!
I had leftover mashed sweet potato sooo I put together a bowl, inspired/photo by @pinchofyum Mine definitely did not look like this but it tasted incredible. Arugula is my absolute favorite so majority of my bowl was green. 😋🌿😋🌿😋
My version; Sweet Potato seasoned with Turmeric/Ginger/Pepper/Thyme, Raw Arugula, Fried Egg, Rice, with lemon dressing on top of everything!
I find that if I allow my kids to be involved in choosing and making dinner they are more likely to eat it. Tonight they wanted pizza, but I was not about to make dough from scratch 😴 and they were not in favor of the pizza bagel idea. So we tried this, pizza on a tortilla, and they LOVED it! Sprouted tortilla, pasta sauce and green cube mixed together, cheese, and topped with roasted orange and yellow bell peppers. I have mixed feelings about posting these...
On the one hand, I am pretty darn proud of how far I’ve come. 🙌
As you may know, I was a yo-yo dieter my whole life and I’ve finally been able to keep my weight off for over 3 years with programs that fit perfectly in my life! 💙
On the other hand, I’m excited to see how much farther I can go.
Truth be told, I’ve never ever liked my lumpy thighs 😜 and I’m going to see if there’s any hope to lifting my flat mom butt! I’ve sat on for a very loooooong time!!
Taking before photos is a very vulnerable thing...you feel the scrutiny and the judgment. 👀
We are ALWAYS our own worst critics of course!

My favorite meal of the day is breakfast. I always crave some version of eggs. The funny thing is I didn't like eggs until I met Rigo and eggs were his favorite!!! They grew on me and now I'm obsessed!!! Throw in some peppers, Turkey, and Spinach and you have a nice hearty breakfast. #eatyourcolors#neverskipbreakfast
The amount of chopping I just did with a toddler standing right under my feet deserves an Olympic gold medal! 😅 But I'm also thankful for that same little toddler who isn't a picky eater and will #TasteTheRainbow with me! The only thing she wouldn't touch we're the Brussels Sprouts and I don't blame her! 😂😂This was a hit in our house and will be made a lot more often (hopefully while the toddler is still in baby school 🤷🏼♀️) #EatYourColors

How to make an avocado nest to fill with veggies, quinoa salad, noodles, or whatever you'd like. Use a chef's knife to transfer to a plate. I filled it with my usual colorful veggies, sprinkled on hemp hearts and drizzled with flax oil and lemon juice.
