Brunch is the most important meal of the day!🍳🥘 Honestly I wasn’t too happy with the taste of my meal but the service and presentation is always stellar!

I’m back at uni this week (my 4th & final year - boooooom! 👊🏻) which means listening to online lectures while I linger around my stovetop searching for snacks...
Back to 25 cups of tea per day (spearmint cold brew is on high rotation - I love the flavour & am keen on its anti-androgenic properties), attempting to learn over the noise of Newtown neighbours, actually using the old brain again, being able to make turmeric fried eggs for lunch, etc. Oooh how I’ve missed this dance!
I layered up sautéed greens, leftover Moroccan quinoa, cauliflower & chickpea salad, home (balcony) grown parsley, & popped some turmeric & ghee fried eggs on top.
Ok, now I’m ready to study again (make more tea).

2 - whole eggs (room temp)
3 - tablespoons organic raw blue agave nectar (to taste or preferenced sweetner)
1 - gentle squeeze of lemon (optional)
1 - 8 oz cream cheese (room temp/soften) low-fat is fine
3/4 cup - PB Fit Peanut Butter powder
1/4 cup - sour cream (or low-fat)
Crust: Crush cookies and add coconut oil (about 2 TBL) only enough so you can press it down onto the baking pan. You can also add crushed nuts. Bake 350° for 15 mins and cool thoroughly. OR, use ready-made crust. The bigger your pan the more crust you'll need. For this mini pan I used three nutter butter cookies and scraped out filling.
Preheat oven 325°, prepare two mini springform pans or one tart pan (or preference). Batter: Beat/mix eggs for 5 mins until fluffy; add agave, mix for a min. Add lemon, cream cheese, and sour cream, and PB powder. You want a cake batter consistency. If the batter is too thick, add a bit more sour cream. Pour into your prebaked crust and bake for at least 45 mins. The edges should puff up slightly with the middle set. If, after 40 mins, the edges are puff and center is set-it's ready. Let cool completely, then refrigerate at least an hour before serving. You can leave as it or cover in ganache (melted chocolate).
Regular VS. Kettle Cooked Chips 🤔 is there really a difference between the two? #knowyourfoodfacts chips edition! 🤓
🔍Based on strictly the calories & macro numbers, no - there really isn’t a difference between these two @lays chips! ❌ Despite “kettle cooked” sounding lower calorie or lower something...it’s nutritional facts are almost identical to regular chips, as shown above! Well, I guess you get ONE more chip per serving size of the kettle cooked chips 😋 but that’s not a big difference in my eyes.
❗️There is ONE major nutritional difference between these is the sodium! The kettle cooked has almost HALF the amount as the regular - 90mg VS 170mg 👀 so if sodium is something you watch, kettle cooked may be your chips of choice!
📚Moral of the story: even if the packaging, the naming, the marketing makes something look “healthier” or whatever else - always confirm with the nutrition label. The more you observe these labels, the better you’ll be at deciphering what food options are best for you! 🤗

When you recipe test all day and can finally enjoy it 😂 lunch today is zoodles with delicious baked eggplant parm which will be up on Friday! Im extremely thrilled with how these came out and to share the recipe with you. Friday can not come soon enough! Hope you guys are having an amazing day!

It was snowy today in Vienna so all I wanted was a cozy bowl of oats (what's new 🤷♀️)! I didn't even want to go outside but we had a tour of the Austrian National Library today so I went to check it out and I wasn't disappointed! The buildings are all so beautiful here ☺️ In my bowl 👉oats cooked in almond milk, topped with banana + strawberries + blueberries + ginger granola from borough market + peanut butter + cacao nibs + chia seeds

Have any of you ever had SAVORY french toast?! Well, it is #ToastTuesday after all, so explore @starinfinitefood's creation! PS she used sourdough bread AND Soom tahini, so you know it's EXTRA tasty ;)
Chickpea Spaghetti with Spicy “Creamy” Tomato Sauce with sautéed garlic, mushroom, red pepper, and arugula.
To make, used 2 servings @eatbanza Chickpea Spaghetti. Sautéed the veggies and added in 1/2 cup crushed tomatoes, scoop of Greek yogurt, fresh parsley, and a generous dash of onion powder, oregano, salt, pepper, and red chili flakes. Mix in some olive oil, and you’re all done! Serves 2
