Proof that you don’t have to be a chef to eat healthy. If you can cook an egg and turn on an oven then you can have this healthy #plantbased grain bowl.
Step 1. Preheat oven to 375, place broccoli florets on a pan, spray with EVOO or 🥑 oil and sprinkle with fave seasoning (or just salt and pepper) and roast for 20 min.
Step 2. Heat prepackaged grain (I used 365 lentils & barley pack)
Step 3. Cook 2 🍳
Step 4. Place spinach in the bottom of a bowl, add cooked grains, 🥦, 🍳 and any condiments / toppings ( 🥑, kraut and hot sauce for me). Voila 5 ingredient dinner in 20 min, no cooking degree required.

My favorite focaccia is made of bread dough with little yeast that is allowed to languish in the refrigerator for days (at least 3 but 5 is best) and rise ever-so-slowly, developing flavor and strength as it rests. I stretch it out using my wannabe pizzaiola skills 😂 trying for lots of lovely air bubbles to dot the surface like a moonscape. Then i pop it into onto an ultra hot pizza stone, drizzle with ev oil and dust with magic fairy dust aka sea salt. Once it has a nice golden underside and deep amber bubbles (yay) I pull it out so it doesn’t over cook. You see for me, the perfect focaccia is crisp on the outside with crunchy air bubbles 😋😋 and soft inside filled with a web of tiny air pockets that show off a perfectly risen dough. stressful days used to result in me drinking somewhere with someone, or at home with no one at all. mixed with countless medications I was prescribed (one being ambien for sleep - which resulted in an overdose) was my recipe for “how to feel better after a shit day”, I would deal with tomorrow when it arrived. so, shoutout to my kid for bringing me such joy where I voluntarily turn away from all that - even on the hardest days. for teaching me balance. for showing me innocence. for being my light when the world gets dark. isaac, there is nothing I look forward to more than getting you out of bed in the morning and starting ANOTHER day together. love, mom.
