Wishing I had more of this ginger carrot soup to warm up on this rainy day here in TO 🌧 featuring this amazinggg sourdough for #toasttuesday that is so delicious 💫 •
To make the soup 👇🏼:
1. Sauté 2 yellow onions, 2 tsp of minced ginger and 4 cloves of minced garlic together with 1 tsp coconut oil 🥥
2. When onion is translucent, add 2 tsp turmeric + 1 tsp smoked paprika, and continue sautéing for about 3 minutes ✨
3. Add 1 can of diced tomatoes, 4 large chopped carrots (chopped as batons, as shown in picture), 4 cups of veggie broth, the juice of 1.5 lemons, 3 bay leaves, 1/3 cup of red lentils, and salt + pepper to taste. Bring to a boil then let simmer for ~20 minutes or until the carrots are tender 🥕
4. Add 1 can of white beans (I used cannelloni but you could also use chickpeas!) and 3 handfuls chopped kale and let simmer until kale is wilted 🌿 •
