I made another batch to use for breakfast muffins for this coming week! All I did different for the muffins were increase the number of eggs to 8 to make 12 muffins. I haven’t calculated the macros for the muffins yet.
1/2 pound breakfast sausage
1 ounce goat cheese
1/4 cup chopped roasted red pepper
1 tablespoon chopped white onion
1 stalk green onion/scallion chopped
2 tablespoons heavy whipping cream
6 dashes of Tobasco sauce
A pinch of Himalayan salt
Course ground pepper to taste
How I made it:
Browned sausage with onions and red peppers. Added scallions when browned and allowed to soften the scallions.
Placed sausage mixture into the air fryer cooking pot (buttered the bottom to keep from sticking). Topped mixture with crumbled goat cheese
I then whisked together the heavy cream and eggs. Add the salt and pepper and Tobasco sauce, whisk until frothy. I poured eggs over the sausage mix and placed it in the air fryer at 360 degrees for 10 minutes. Once I turned it onto the plate, it was still needing a few minute to cook the center. I then placed it into the air fryer basket****with the holes and the browned side was down. I cooked it another 3 minutes and it came out perfect!! 90 second bread can be googled.
I can’t remember where I found the original recipe I use. It’s 3 tbsp of almond flour, 1 tablespoon melted butter, 1 egg, 1/2 tsp baking powder and pinch of salt. Melt butter, add in flour, egg and baking powder and salt. Whisk together well and place into a ramekin (I used a coffee cup). Cook in microwave for 90 seconds.
Once cooked, I sliced it and browned it in a skillet for a minute each side then added butter. I'm spicing things up this #FrittataFriday with a small spicy cauliflower, cheddar, and green onion frittata made with roasted cauli tossed in cilantro hot sauce and @vitalfarms pasture raised eggs. I ate half with avocado toast and fresh tomatoes on the side.
Time for another what I ate today post! 🌞.

If I would be at home I would make a frittata for brunch... I made this zucchini, mushroom and spinach frittata a few days ago and topped it with radish slices, ricotta and lots of fresh herbs. It’s quite the combo 🌿
