I very well could have been pretty grumpy about the fact that I started my work day at 5AM and and have to be back for the evening shift that ends at 9PM. But I'm choosing to be grateful that this marathon day allowed me to take an afternoon break and go for a run on the most beautiful February day. Oh and the fact that I work with the best people who will make me laugh despite my delirium ☺️
Re-Feed day is done for another 2 weeks & boy I darned enjoyed stocking up those glycogen levels 🤣🤣 I had white Cob, floury white roll, cornflake crusted chicken, banana cookie, donut, brownie, chocolate & peanut butter balls all #glutenfree#dairyfree This mama needed some treats just sitting down to a coffee & cake kids in bed listening to nothing is pure bliss sometimes you just need that ☺️ Now I’m ready to smash tomorrow leg day go food shopping & catch up with friends & toddlers 🤪

calling all sweet potato lovers🙋🏻♀️🍠 you are going to love these purple sweet potato blondies!💟 the purple sweets make these blondies so incredibly creamy and moist🤤 and since they’re loaded with nutrients they’re great for dessert or even a mid-day snack! you can use regular sweet potatoes but honestly the purple ones make take it to the next level🔥 .
〰️Purple sweet potato blondies〰️
-1 cup mashed purple sweet potato
-1/2 cup unsalted creamy almond butter
-1/3 cup unsweetened almond milk
-1/4 cup coconut nectar
-2 T coconut sugar
-2 tsp vanilla
-1 cup almond flour
-1/2 cup gf oat flour
-1 tsp baking powder
-1/2 tsp sea salt
-1/2 tsp cinnamon -1/3 cup dairy-free chocolate chips
Directions: Preheat oven to 350F and kind an 8x8 pan with parchment paper. Put all wet ingredients except the egg into the food processor and blend until smooth. Then add the egg and pulse until combined. Add the rest of the dry ingredients and blend until just combined, being careful not to over mix the batter. Pulse in the chocolate chips, then pour the batter evenly into the baking pan. Bake for 20-22 minutes or until a toothpick comes out clean. Let cool completely before cutting into bars. Store in an airtight container in the fridge!

Guys, I am not getting physically & mentally stronger by sitting on the coach scrolling through my newsfeed saying to myself , “ I wish I looked like that” or “why can’t I be like that?” I work on me EVERY. SINGLE. FRIGGAN. DAY.
I DO NOT compare myself to others journey’s. It simply isn’t worth the energy to me anymore.
I get up, do me, work hard af & live my life 💕
My advice to you: Press play, go for a walk, go to the gym (if that’s your thing) do what you have to in order to get where you want to be. You can’t get there by simply wishing or dreaming it.
You have to A C T U A L L Y put in the time & effort, loves 💕💕
Today is REFEED DAY on my nutrition plan! Nope it’s not a free for all or a cheat day. It’s scientifically based to replete our muscle glycogen stores so we can push harder tomorrow for a difficult workout. We are able to eat high glycemic index carbs today to do so. And surprisingly after 6 weeks of eating 100% clean and low glycemic carbs, I have zero cravings and don’t really care that I’m eating brownies. #whodis 🤷🏼♀️
These brownies are made with all clean ingredients and are super simple. Recipe below ⬇️
1 (15 oz) can chickpeas, drained and rinsed.
1/4 cup organic, grass-fed butter, melted.
2 large eggs.
1/2 cup pure maple syrup (or raw honey).
2 tsp. pure vanilla extract.
1/3 cup organic, unsweetened cocoa powder.
1/2 tsp. baking powder.
1 pinch sea salt.
1/4 cup chocolate chips.
1. Preheat oven to 350 degrees.
2. Line 8x8-inch baking pan with parchment paper. Lightly coat with spray. Set aside.
3. Place chickpeas, butter, eggs, maple syrup, extract, cocoa powder, baking powder, and salt in blender or food processor, cover, and blend until smooth.
4. Add chocolate chips.
5. Evenly spread batter into prepared pan.
6. Bake for 25 to 28 minutes, or until a toothpick inserted into the center of the brownies comes out clean.
7. Cut into 16 squares.

It’s been a crazy (but great) few travel days filled with last minute decisions 🙃 So long story short, with a v rainy forecast for central Greece I decided to head over to Macedonia instead 🇲🇰 I spent the last couple days in Skopje and tomorrow I’m heading for Mavrovo 🔜🚘 Food wise, this is the first food pic I’ve taken in days 😱 And a great one at that from a tiny little vegetarian takeaway in Skopje 😋🥦 PS scroll from photos from today’s day trip to Matka Canyon ⛰ #travelwithlo .
I ate... pastrmalija (similar to pizza, topped with seitan + veg + cheese + olives + sesame seeds; a typical Macedonian food), cabbage + pepper stew (can’t find the name; a typical Macedonian dish), beetroot hummus, broccoli salad purée type dish, lentil mix/purée? + more veg, roast seitan, and raw cabbage 🍕🥗 #fuelyourbody#fuelyourmind
Today's plan = productive play day! It possibly turned out more exhaustive than expected but still....😆
Not in clinic so made the most of it and got in a double training session, with some social media and blogging work done for @hhb_nutrition between 🤓
AM - Snatch tekkers and hang snatches, followed by 4 sets of 5 pull ups and 4 sets of 8 bar dips 🏋
PM - 4 min tabatta; 20s on 10 sec off, 5 burpee box jumps each round, 8 rounds. Followed by a 1k run - 3 rounds total. It's safe to say this one was not quite as fun as I expected and I've not functioned properly the rest of the evening 😂
🍽🍵Food in pics; pre workout coffee with 2 tbsp organic pouring cream and 1 tbsp collagen protein powder.
🍜 Dinner was lamb bolognese (cooked at the start of the week) with some green veggies and avocado. 🌿🌿 .
Also cycled in more carbs around workouts (usually sweet/white potato, white rice, dates or oats) to try and help boost recovery and performance as much as possible while currently getting weight down a little!

Healthy snack idea - coconut yogurt (healthy fat ✅) with hemp seeds (protein ✅) and drizzled with some raw unpasteurized honey (nutrients ✅). This is the type of snack that will balance your blood sugar and give you more lasting and stable energy! No marinara? No problem 😎 How about black bean sauce?! Seriously, this tastes soooo good. I used @betterbeanco Cuban black beans, @simplemills grain free flat bread, @heidihoorganics cheese, arugula, avocado and lemon pepper to create this beauty. To veganize the @simplemills crust, I use extra virgin Greek olive oil, red wine vinegar and water- sorry I eyeball it! I drizzled more olive oil on the top after the picture. YUM.

The only BLUES in this 70 DEGREE weather is in this smoothie bowl!! I’m hoping the groundhog was truly wrong and this sunshine is here to stay. Went for a run and do a workout outside, felt SO good. Let’s face it, I’m not a big “veggies for breakfast” kind of girl unless I’m smothering my brussels in maple syrup (which I actually have done before☺️) but this cinnamon cauliflower n’oatmeal was delicious. Top with @squareorganics bar, banana slices and chia seeds and you won’t miss the oats!
Not my breakfast today but I made these this past weekend because I was all out of oats. I didn’t use a recipe but here is what I put in: cauli rice, @gaiaherbs vanilla chai Maca powder, cinnamon, @vitalproteins coconut collagen creamer (1 scoop). Heat on stovetop until warm.
