BONJOUR! 🇫🇷 We’re on the first day of our week with @skibeat.co.uk here in @valdisere ⛷⛷⛷⛷.
As my first trip #coeliac I was worried about how much I’m going to miss out on, but day 1 #glutenfree#afternoontea was delish. It’s hard to make cakes in the #alps due to altitude anyway, so this was a real challenge but I was very impressed 🎂🍰🎂🍰🎂🍰🎂🍰🎂
I almost ordered a beet salad with goat cheese but then I thought, I can just buy that at the supermarket.. so I went with the burrata and I’m so happy I did❣️This was so good it reminded me of the buffalo mozzarella I had in Italy, like melt in your mouth good 😍
I brought beef stew ❤️ with Guinness, to be exact. Because I hear there’s this St. Patrick’s Day coming up? It’s also 100% appropriate for your Sunday tomorrow. A Sunday lunch without a food coma? Yep, totally possible: This one is filled with vegetables, uses mushrooms in place of some of the beef and is just deliciously rich and hearty without being heavy and stodgy. Oh and no, it doesn’t taste of beer. If you happen to vastly prefer champagne like I do 🤷🏻♀️👸🏻
I crave these everyday! The chocolate apple bites are SO EASY to make and not bad for you at all. Double tap if you are as obsessed with tart apples dipped in chocolate/caramel as much as I am.
Granny Smith Chocolate Apple Bites
1/4 cup lemon juice
2 Granny Smith apples
3 oz. dark chocolate, roughly chopped
2 tbsp walnuts, chopped
2 tbsp cashews, chopped
1 tbsp mini dark chocolate chips
1. Wash the apples and pat dry with a paper towel. Use a tablespoon or melon baller to cut out small rounds from the apples. Place into a bowl with the lemon juice and enough cold water to cover. Set aside.
2. Melt the chocolate in a glass bowl in the microwave and stir until smooth.
3. Prepare a long sheet of wax paper on the counter. Drain the apple pieces and pat dry. Use a toothpick to dip the apple pieces into the melted chocolate. Place onto the wax paper. Sprinkle with toppings of choice. Repeat with remaining apples. If desired, place into the refrigerator for 30 minutes before serving.

Approach mini eggs with caution, they have no gluten containing ingredients but aren’t actually labelled as gluten free.
One of the most satisfying dinners I’ve had in a while 🤗 Warm fusilli salad with roasted winter squash & mushrooms made in collaboration with @sunbasket 😍 everything is organic (and SO fresh)! I also love that the pasta is quinoa noodles! Did you know I used have an intolerance to quinoa, but happy to say no issues lately! Sooo glad I’ll have enough left over for tomorrow! #sunbasket

Hopefully by now you guys have figured out that if it’s not easy and quick, I won’t be making it for dinner… This bowl right here is another example of one of my go-to options for an easy weeknight dinner...
@costco has some great options in their freshly prepared section (though some of them aren’t, so you have to know which ones to choose)... and one of my favorites are these stuffed peppers… They’ve done all the hard work for you, and filled them with veggies, ground beef, tomato sauce, rice, and a little Parmesan cheese… All you have to do is stick it in the oven when you get home. And then I add half of a @twrgrassfedbeef uncured sausage and some @simplemills crackers and dinner is done!
My girls will eat the filling on the inside of the peppers, if I scoop it out ahead of time onto their plates. And they also love sausage, which is part of my motivation for adding it to the peppers, because I know that’s one thing they will for sure eat.
A lot of people ask me if my girls eat the same things that I post on here… And the answer is that sometimes they do, and sometimes they don’t. As a general rule, I tell parents not to be a short order cook and don’t make separate meals for your kids, but that doesn’t always have to be true. If I’m making something that I know they absolutely don’t like, I still offer it to them, but I also prepare something I know they’re more likely to eat and that also fits within the nutrition goals I want them to get at that meal. As kids get older, I do think you have to respect when they try stuff and actually decide they don’t like it. You can’t force your kids to eat anything, and sometimes that means making something slightly different, still nutritious, but also aligns with their taste preferences.
