Still here, still pregnant 😆 I’m keeping up with prenatal yoga, walking, enjoying the sleep I am getting, relaxing and nourishing my body. Today’s lunch was @eatbanza chickpea pasta with a bell pepper & pumpkin seed sauce (recipe below) over spinach with extra pumpkin seeds, black sesame seeds and avocado 🙌🏽 PS I know some of you have asked me for recipes on the last couple posts and I’m behind in responding to comments! Working on it as I can, but (understandably) my mind is a bit distracted this week 🤰🏽🙃 BELL PEPPER + PUMPKIN SEED SAUCE
- 2 roasted bell peppers, skin off
- 1 clove garlic
- Juice of 1 lemon
- 1/2 cup pumpkin seeds
- 1/2 teaspoon paprika
- Salt + pepper to taste
Blend all ingredients, and store in fridge to use as needed!
