Bowls are life, am I right? Lunch today: chicken sausage, garlic roasted brussels, cauliflower pilaf (omg so good) and delicatta squash. PSA: delicatta squash is that good good and so easy to make. Do it do it:
1. preheat your oven to 400
2. cut squash into rounds, then cut in half
3. line pan with parchment paper (or tin foil)
4. spray pan with coconut oil spray
5. lay down slices of squash and coat with spray
6. bake for 25-30 min until done (sometimes I throw it on broil for a minute at the end if they aren’t quite crispy enough)

First time making butternut squash risotto: success. Well, sort of. It took me almost two hours but it’s fine...
Having a super 👏🏼LIT👏🏼 Friday night tonight with this post-workout dinner filled with allll the goods. On deck we have some crockpot chicken thighs🐔, steamed broc🥦 and some crockpot butternut squash🍠 and raisins. This meal has such a good variety of flavors - perfect fuel after a tough day at the track🙌🏼. About to go see a movie with the sis, have a GREAT Friday evening fellas!

No, your eyes aren't fooling you, this is my whole stash of nut butter! Lol! I've really got an entire drawer dedicated to it! I told y'all I'm obsessed with nut butter!! If you didn't believe me before, well what do you think now?! I have some with my banana every morning and some with oatmeal almost every night. So ya gal's gotta stay stocked!

Grilled Saratoga Lamb Chops w/ Rosemary and Dijon... Have you heard of Saratoga Lamb Chops or Roll ? Super tender, delicious lamb flavor, but interesting... they’re not really a “chop”. It’s meat from the center area between the shoulder blades with a nice amount of fat and contain ‘rib eye’ muscle. (say rib eye, I’m IN !). It’s rolled, then cut into 1 - 1 1/2” slices for “Saratoga Chops”. They aren’t one solid piece like a regular chop, so they’re tied and/or skewered into a round ‘chop shape’ with a nice little layer of fat on the outside. Butchers and lamb-lovers comment w/ more info. I love learning something new and this is what little info I found. So good, I’d love to try them again OR get my hands on a “Roll”.
This is farm raised lamb from @buyranchdirect seasoned w/ dijon, fresh rosemary, rosemary salt and steak blend from @jacobsensaltco for a couple hours. Tied round, then grilled in the dark with a flashlight, crossing my fingers I didn’t over cook these little beauties.
A lot of the time when I cook for my crew I think how can I get more nutrients into this meal. I see my job as directly influencing their health and wellness because I provide pretty much all that they eat much like a parent with their children!
Our bodies need nutrients to function properly and to get this we need to be eating a variety of fruit and veg. I’m not a qualified nutritionist but I have a keen interest in food as medicine because of many (too many) friends, as well as my own, cancer experiences. As a chef my passion is for creating food that not only tastes incredible but also feels incredible and I hope helps to heal. Cutting out the fried food and processed things and replacing them with more meals made from raw ingredients will greatly help your overall health and in turn, happiness. On top of this, getting out into nature for walks and learning how to breath properly as well as allowing yourself relaxation time with quiet activities and meditation are incredible for assisting in healing. These are long term lifestyle changes not fads. You need to treat your body as if it’s your prized super car, you wouldn’t put shit gasoline in a high performance car and expect it to operate well. We spend so much time focusing on other things in our lives and just take for granted that our bodies will simply operate after we continue to abuse it with alcohol, drugs, shit food and not exercising. While we are young we can perhaps get away with this but eventually the mistreatment catches up with all of us. So many people don’t understand that your body is your greatest possession and needs to be nurtured and cared for like it is. Love your body, care for it and do lovely things for it. It definitely deserves it!
This little delight is made with soy, honey, ginger, garlic, chilli, red peeper, spring onions and organic tofu with brown rice. And to add more of nature’s love and nutrients it’s wrapped in collard greens. Tip: cut the thickest part of the stem and then gently make an incision along the length of the stem left. Have I mentioned how much I love ramen? 😂 This was a random one with a chow mein style ramen I got from Fubon in SE Portland. I added broccoli, chickpeas and avocado. So good!

It’s true!! Sometimes I get so lazy and lose track of what’s important but I have to keep reminding myself to live every moment to the fullest. I need to keep my eyes forward and remember why I’m making a change to a healthy lifestyle. I was in a car accident Wednesday and it made me appreciate everything so much more. ❤️
Bulk season is my favorite season but it’s easy for me to eat a lot😂 I was gonna cut but I’m in the middle of track season/peak (2) week(s) sooooo it’s probably not my best idea to do that. I want to have energy and focus on my performance 😊fitness update: coach said it’s time to maintain my muscles (meaning high rep low weight) and to stop lifting heavy!!! So that’s what I’ll be doing.... I’ll work back to 185lb after the next couple weeks then attempt 200!

Meal prep pro tip...make enough of a meal
to be able to freeze so on extra busy weekends you don’t have to stress about meal prepping for the week 👍🏻
Chili and cornbread
1 can garbanzo beans
1 can aduki beans
1 can kidney beans
1/2 diced white onion
1 zucchini diced
1 cup butternut squash
1 cup mushrooms
2 tsp cumin
2 Tbsp oregano
1/2 tsp cinnamon
2 tsp chili powder
2 tsp minced garlic
1 chipotle pepper (dried) or you could use 2 chipotle peppers in adobe sauce peppers 🌶 (don't want the extra spice leave out)
1 can fire roasted tomatoes
1 Tbsp tomato paste
1 package @bonafideprovisions turkey bone broth + 2 cups water
Sauté onion with some olive oil and cook for 3-5 minutes. Then add mushrooms, zucchini, and butternut squash and cook for 7 minutes. Then add the seasoning, garlic, mix, and cook for a few minutes. Then add in your broth, chipotle pepper, tomato paste, fire roasted tomatoes, bring to a boil and then cover and simmer for 30 minutes. In separate pan cook ground turkey and add to chili mixture.
1 cup organic unsweetened almond milk
1 Tbsp apple cider vinegar
2 Tbsp maple syrup
1/4 cup unsweetened apple sauce
1/4 cup melted coconut oil or chosen blend oil (from @chosenfoods)
1 Tbsp baking powder
1 tsp baking soda
1 cup fine ground cornmeal
Pinch of sea salt
1/2 cup coconut flour
Handful of @organicpasturesdairy cheese
1 jalapeño diced
Mix the wet ingredients and then add in dry and mix. Fold in the cheese and jalapeño. Add to a greased cast iron skillet and bake 350 for 25-30 minutes.

For the cauli oats 👉🏼 Cook 1 cup frozen riced cauliflower + 1 cup almond milk + 2 tsp peanut butter + 1 scoop @furtherfood collagen + 1/4 tsp cinnamon for about 15 minutes or until milk is evaporated. Sweeten to taste with honey 🍯
