How did I not know that today was #nationalmuffinday ??? I’m sure the kids won’t mind if I’m a day late, so I’m making them these Banana Oat Muffins for breakfast mañana 🍌You can too! grab the full recipe on the blog in the breakfast archives, lionsbread.com or tap the link in my bio @leanne.shor
I’m back at uni this week (my 4th & final year - boooooom! 👊🏻) which means listening to online lectures while I linger around my stovetop searching for snacks...
Back to 25 cups of tea per day (spearmint cold brew is on high rotation - I love the flavour & am keen on its anti-androgenic properties), attempting to learn over the noise of Newtown neighbours, actually using the old brain again, being able to make turmeric fried eggs for lunch, etc. Oooh how I’ve missed this dance!
I layered up sautéed greens, leftover Moroccan quinoa, cauliflower & chickpea salad, home (balcony) grown parsley, & popped some turmeric & ghee fried eggs on top.
Ok, now I’m ready to study again (make more tea).

Have you tried our new Lavender Iced Lattes yet 😋?? Lavender or Rose, which flavor would you pick 😊. Thanks @thedailyjenny for this amazing shot 😍. #supacoffee
Regular VS. Kettle Cooked Chips 🤔 is there really a difference between the two? #knowyourfoodfacts chips edition! 🤓
🔍Based on strictly the calories & macro numbers, no - there really isn’t a difference between these two @lays chips! ❌ Despite “kettle cooked” sounding lower calorie or lower something...it’s nutritional facts are almost identical to regular chips, as shown above! Well, I guess you get ONE more chip per serving size of the kettle cooked chips 😋 but that’s not a big difference in my eyes.
❗️There is ONE major nutritional difference between these is the sodium! The kettle cooked has almost HALF the amount as the regular - 90mg VS 170mg 👀 so if sodium is something you watch, kettle cooked may be your chips of choice!
📚Moral of the story: even if the packaging, the naming, the marketing makes something look “healthier” or whatever else - always confirm with the nutrition label. The more you observe these labels, the better you’ll be at deciphering what food options are best for you! 🤗

Guys we’re back after a short break! We’re ready to feed those hungry tummies. 😋
It's been chilly here. Seems almost ridiculous for me to say that. I'm from Canada and used to live in the freezing cold of Toronto during grad school. That's cold. I actually wore a jacket today. I have yet to wear anything but a sweatshirt since I moved to SoCal. It's super nice here all the time. Only problem is that I have some nice winter clothes that just sit in my closet now. Not a big problem, I know! 😜
Anyway, this was the perfect winter meal. Instead of using only butternut squash, this is a mixed squash soup. Watch my story to see how I made it!
Squash, onions and garlic, @caoliveranch EVOO, @kerrygoldusa grass-fed butter, homemade chicken bone broth, ginger, salt, pepper, maple syrup.
Happy Tuesday!!! #bowlsbyjoey
So I finally got my wide angle and macro Moment lenses this month. I’m just blow away with both the build quality and how much difference they make, when I’m using the iPhone X while taking both video and photos. This image was taken using the macro lens at 2x magnification using the Moment photo app and edited in VSCO. Incase you wondering, they are instant coffee granules. ☕️

Sheetpan chicken fajitas! Kids had it with flour tortillas but I didn’t miss those. #fajitas
After talking (bragging?) about how we haven't had much of a winter this year, we got about 9 inches of snow dumped on us yesterday! And it was the HEAVY stuff, not the famous Utah powder. So if I'm looking extra buff to you these days, you can thank the endless driveway shoveling I had to do. 💪😓😩⠀
ANYHOW, I am using my witchy baking powers to summon spring with this ultra-bright and cheerful strawberry swirl bundt cake! Vanilla cake, strawberry swirl, and a ton of pretty buttercream blooms on top. 🌺🌹🌷🌸⠀
I know, it’s not nearly as exciting. But I’m branching out a little with my Instant Pot (we started pretty basic 😂), and this Teriyaki Chicken and Rice is next up.
P.S. (because I know you’re wondering and I’m sorry for not giving more sneak peeks!) The video shoot went well! So fun but exhausting and I’m done trying to form words for at least a day or two 😳😉.

When was the last time.you made something only for yourself? Not for your children or your husband, you parents or your wife, or even for Instagram or Facebook? .
I used to always love cooking for myself. My brothers - a whole lot of them - and sister were my benefactors. Also my guinea pigs. They bore everything I made - from poha and upma to noodles and pizzas - and have many harrowing tales to tell. (Thankless fatso's, I tell you!) But did I care? No..I carried on unperturbed, cooking what I like and how I liked it. If course there was the mother and the aunt's to fix things that went horribly wrong (that story some other time). This continued till I married and cooking became a chore. .
Eventually kids were had, friends were made, husband was to be fed. And cooking for myself became an added task that could easily be done away with. Plus the brothers and sister grew up and thought I was the worst cook..🙄.
Off late though, once in a while, I have started making things I like. In the beginning it was hard to even remember what I liked, so I started eliminating what I did not like bit ate none the less. Then I started focussing on things that I used to love but no longer made - it was just so inconvenient, you see. .
This morning after sending kids to school, despite the urge to eat the leftover tiffin as breakfast, I made myself bathua parathas, served some achaar (also made only for myself and shared with the brother who still values it) and some malai. And it was the most perfect meal I had had in many days. .

Beets are so magical ✨ seriously how is something that grows in the dirt so vibrant? This hummus is a great way to use up extra beets, and you barely even taste them!
