P-Day 😄 Heisst es bei uns, wenn es Pizza gibt. Für die Kinder gab es normale, selbstgemachte Pizza und für uns hab ich mal die Mischung von @dr_almond_lowcarbglutenfrei probiert... Als Belag: Schinken, Champignons, ein bissen Avocado, weil eine halbe noch vom Frühstück in der Küche rumlag und sie kein halbes Dasein fristen sollte. 😂 Außerdem ein paar Kleckse grünes Pesto und natürlich vieeeeeel Kääääse... Und gefühlt nochmal so viel Tabasco 😂 Pizza ohne Tabasco geht für uns einfach nicht.
Der Teig war wirklich überraschend gut und sehr lecker - aber an die #fatheadpizza die ich sonst immer als LCHF/Keto Variante gemacht habe, kommt sie doch für uns nicht ganz ran.
Die Foodtrackerapp sagt heute 12,3g KH - ich würde sagen: Läuft! 💜

Cold snowy days call for a savory and spicy grain-free, grassfed beef chili for dinner 😋
I’ve posted this recipe before (and to be honest i always add something new) but it’s so simple:
✔️2lba grassfed ground beef
✔️1 organic onion, chopped
✔️3 organic bell peppers, chopped
✔️1 organic zucchini, chopped
✔️2-3 garlic cloves, chopped
✔️28 oz can organic tomato sauce ✔️1 container of fresh pico de gallo (cab also make homemade or in a pinch- 2 cans rotel)
✔️chili seasonings (recipe below)
✔️habanero hot sauce (I use @heatandflavor) to taste
✔️1 tsp extra dark unsweetened cocoa powder ✔️tsp dark roast coffee
✔️salt and pepper to taste
✔️ghee for cooking
✔️3 T chili powder
✔️2 T cumin
✔️1 T ground black pepper
✔️1 T salt ✔️1 T garlic powder
✔️1.5 tsp ground red pepper ✔️1/2 tsp cayenne ➡️ brown and drain beef in one pan while sautéing onion/peppers in another in ghee. Add garlic the last couple minutes. Combine beef and veggies in a Dutch oven or stock pot. Add tomato sauce, pico, chili seasoning, hot sauce, cocoa, coffee and salt and pepper and stir to combine. Cover and reduce heat to medium for 45 minutes. Take off lid and simmer on low-medium for another hour.
Found out I have to work 14 hours instead of 8 tonight.. but still completed a quick workout.
Last year when I decided to FINALLY do this...FINALLY reach my goals...smash every single one without looking back...I decided to commit to myself. Commitment to me means working out even when it isn't the most convenient. 💪💪💪 Commitment gets me results 😉💪

If you saw my kids boogie boarding behind the 4-wheeler in my stories again today, then you know we’re having another snow day here. And it is a doozie. I truly do not understand how they can stay out in it when it’s 3 degrees with the wind chill. But one thing is certain, they know how to have a good time, and I love it.
As for me, I maaaaaaaaybe step my foot outside the door to snap an occasional picture and make sure everyone is still alive, and then run right back inside to my hot beverage - in this case, a delicious @vitalproteins matcha collagen latte (vital proteins link in profile if you want to find it). I add @bulletproof brain octane oil and coconut butter to mine for all those good good fats, and sprinkle plenty of cinnamon on top. Hope you’re enjoying whatever weather you’re having today!
Prepping some chicken for casseroles this week. Season and slow cook your chicken breasts in a crock pot until done. When they are still warm and juicy, hack at them with a hand mixer. Viola! Chicken is shredded for casseroles, bbq sandwiches, chicken salad, etc. I’ll freeze half of this and use the other half for a casserole. Sorry the video is a little off, I had trouble using the hand mixer and keeping my phone steady at the same time! You can also hear my youngest in the background, wondering why I was taking a video! The weird things mama does!

Low carb Blackberry Cobbler
I had tons of frozen blackberries in my freezer from summer before last.
I had meat being delivered so I needed to make room. So I made a couple of these gigantic blackberry cobbler‘s for a couple of my dear family members.
These are fantastic for family reunion’s especially for us living down south. (Cobblers are a staple of southern living)
For the breading in the cobbler, I used @mariaemmerich gluten-free “Bisquick” mix recipe.
When I put in the calculations for this recipe, I was quite surprised how low-carb it still was considering you’re using berries.
This is awesome served as is but even better when you put a scoop of low-carb ice cream on it!
Calculations are below:
16 servings each-
5 net carbs
8 cups blackBerries
1/2 cup Pyure sweetener, or 1 cup sugar equivalent
2 1/2 cups almond flour
1/3 cup unflavored protein powder
2 tbsp baking powder
1 tsp Cream of tartar
1 tsp Sea salt
8 tbsp (1 stick) butter, cold
1/2 cup Pyure sweetener, or 1 cup sugar equivalent
1 cup almond/ coconut/cashew milk
1. In a large bowl, put the first two ingredients, your BlackBerries and 1/2 cup of sweetener in a bowl, mix well and set to the side.
2. In a medium bowl, add the next set of your ingredients except for the milk and the sweetener. You will need to cut the butter into your dry ingredients. It can be done easier in a food processor. Pulse until ingredients are combined.
3. Now mix in the milk and sweetener with your baking mix. The batter will be a bit lumpy.
Pour the mixture into a 9 x 13 baking dish. Evenly drop and layer the blackberries over top of your batter.
4. Bake for roughly 40 minutes or until desired color.
Remove it carefully from the oven. Let it sit anywhere from 10 to 20 minutes before digging into it.
