Took some shots last Friday evening at @rocio.carvajalc ‘s #mexican supper club in @space_at_61 , part of the series of ethnic foodie events organised by the great people of @soop_stories . This stunning wheat #bread, based on a 17th century #recipe that crossed the Atlantic along with the Conquistadores, is #decorated with a #stamp made out of #chilli and #cacao and called the #pintadera. It used to be a proof back in the day, that the baker had permit to bake bread. It was quite a luxury, as wheat was a completely new thing in #Central#America.
By the way the bread tasted fantastic, as did all of the recipes Rocio had prepared.
Keeping breakfast on the light side: slow roasted chicken, coriander sauce as well as fresh coriander, crumbled feta style local cheese and some pickled red onions. Naturally I had a side of guacamole too 😁
When you come back from a trip and you miss food and flavours from the country you just visited, there is only one thing you can do to fight the saudade: cook them yourself!

It's as simple as sliding the meat into a skillet, adding a splash of water and cracking in the huevos. Cover with a lid and cook until done. Top with a little fresh cilantro+onion combo and 🥑🥑🥑
I never name anything the “best,” because that’s such a bold statement, but these really are the BEST beef enchiladas I’ve ever had! The homemade enchilada sauce is SO good and the blend of spices in the ground beef is perfection. They’re just so amazing in every way and dare I say in the top 5 best things I’ve ever eaten!
