Smoked Salmon + Egg Baked Avocados 😍
makes about 6 servings
4 oz smoked salmon
8 free range eggs
Preheat oven to 425°F.
Halve the avocados and remove the pit/seed. If the hole looks small, scoop out a small bit at a time until it can hold an egg.
Arrange the avocado halves on a cookie sheet, and line the hollows with thin strips of smoked salmon. Carefully crack each of the
eggs into a small bowl, then spoon the yolks and however much white the avocado will hold.
Sprinkle with sea salt and fresh cracked black pepper on top of the eggs, to taste.
Gently place the cookie sheet in the oven and bake for about 15-20 minutes, or until eggs are done to your liking.
Sprinkle chili flakes and fresh dill on top.

The city’s transportation authority, Transport for London, specifically pointed to the manner in which Uber handles background checks and alleged criminal offenses, and, most significantly, reports of its secretive Greyball software – which, it came to light, was being used to evade authorities in cities around the world.
The way Uber sees the matter, the powers that be are once again attempting to stifle their business at the behest of legacy players, in this case the London taxi cab industry.
It’s a legitimate gripe. Visibly disruptive newcomers, most notably Uber and Airbnb, have been forced to fight policymakers tooth and nail in economic and cultural capitals, like New York City and London. Lobbyists for the taxi and hotel industries still wield a lot of power, and employ government obstruction at every turn.
“By wanting to ban our app from the capital, Transport for London and the mayor have caved in to a small number of people who want to restrict consumer choice,” Uber London general manager Tom Elvidge told the BBC. “If this decision stands, it will put more than 40,000 licensed drivers out of work and deprive Londoners of a convenient and affordable form of transport.”
Uber plans to appeal the decision.
