Sunday rituals 😌. Fresh bread from my favourite local bakery @e5bakehouse
IVY GOURD/TINDORA RICE...A signature rice dish of Maharashtra (Maharashtra is one of the western states of India), in which you will experience a unique and subtle flavour imparted by the combination of spices used. You can also use aubergine, frozen peas or a mixture of cauliflower, carrots and green beans, if ivy gourd is not available. ✨Recipe✨
2 tsp oil
1 tsp black mustard seeds
Sprig of curry leaves
1/2 tsp asafoetida/hing
1 cup raw basmati #rice, washed twice and soaked for 30 minutes.
2 cups ivy gourd, sliced lengthwise
1/2 cup grated fresh coconut
1/2 cup fresh coriander, chopped
1 tsp molasses/jaggery
1/2 tsp turmeric
1 tsp chilli powder
For the masala powder...
1 Tbsp coriander seeds
1 tsp black cumin/cumin seeds
1 tsp bits of cinnamon stick
1 star anise
1 tsp stone flower/dagad phool(optional)
1 green cardamom
1/2 tsp fenugreek seeds/methi seeds
1 tsp black pepper
1/4 cup grated dry coconut/dessicated coconut
1 tsp tamarind
1/4 cup roasted cashews
Salt as per taste
🔸To make the masala powder, dry roast all the ingredients separately(from coriander seeds to tamarind) in a pan on low heat till they are hot enough to touch. Make sure not to burn the spices. Let cool.
🔸In a coffee grinder, grind together cinnamon, cloves, star anise, stone flower, cardamom, fenugreek, black pepper and tamarind to a fine powder and empty it in a small bowl.
🔸Now grind together the coriander and dry coconut to a coarse powder and empty in the small bowl as well.
🔸Heat the oil in a non stick fry pan. Add mustard seeds, let it pop. 🔸Add curry leaves, chopped ivy gourd, hing and a splash of water. Cover and cook for 5 minutes on medium heat.
🔸Add the ground powders, turmeric, chilli powder, and jaggery and mix well.
🔸Drain the water and add rice to the fry pan. Add 2 cups of water and salt. Taste to adjust the salt. Stir and close the lid. Cook on medium flame for 15 minutes and remove from heat. Let it sit covered for another 15 minutes. 🔸Remove the lid and add fresh coconut, fresh coriander and mix this rice very gently with a fork. Garnish with roasted cashews and serve.

Serves: 12-13 balls
Prep Time: 5 minutes | Cook Time: 15-20 minutes
Ingredients for the Sweet Potato and Turmeric Falafels: .
- 1 sweet potato (baked or steamed) .
- 14oz can of chickpeas (drained and rinsed) .
- 1/2 cup fresh cilantro or parsley (I used cilantro) .
- 1 teaspoon turmeric powder .
- 2 garlic cloves .
- 1 tablespoon ground cumin .
- 1 tablespoon ground coriander .
- juice of half a lemon + zest of that half .
- 1 teaspoon sea salt
Preheat your oven to 375F. Then simply place the steamed or baked sweet potato into the food processor and pulse for about 10 seconds, breaking down the sweet potato. Then add in the remaining ingredients into the food processor. Pulse for another 15-20 seconds until the chickpeas have been broken down but are not totally blended - we do not want to turn the mixture into humus - we want there to be small chunks of chickpeas throughout.
Then on a parchment paper lined baking sheet, scoop out the falafel mixture with an ice cream scooper and place on the sheet. Just make sure the falafels are no bigger than an inch thick. They should be pretty small. Bake for 15-20 minutes until the top is slightly golden brown and crispy. Enjoy!
Toppings: - I like to add 4-5 falafels on top of a simple salad - arugula, celery, olives, cucumber, hemp seeds and tomatoes salad with a lemon and olive oil dressing (as seen above). - Or add the falafel into a collard green or pita wrap.
If you wonder what it is I do on #restday Sunday mornings? Well, this is about as accurate as it gets (minus the chocolates. I don't eat all the chocolates on Sunday morning before brekkie but they fit the pic quite greatly.) I either read a (cook)book, get lost in scrolling through Pinterest or Instagram or, as is the case today, revisit good memories. Whatever I get into, coffee is always involved.
Do you ever feel like you're aching for a place, a city or the feeling a city gives you? .
However cheesy or cliche it may sound, I'm in love with Paris. I can't explain exactly how the city makes me feel but it feels good. Every time again I'm amazed, or stunned even, by its beauty and grace. .
Okay cheesiness aside, there are some specifics I like about it. The Seine with its bridges ofc, my favourite Shakespeare bookshop (don't judge, buying English literature in French is totally okay), Place de la Concorde with its traffic jams and l'Orangerie where I could spend hours watching the paintings of the lilies. .

Today was such an adventurous day with beautiful food! We kayaked 8km down the Puhoi river to Wenderholm Park where we enjoyed these beautiful packed lunches from @picnicbox on the beach while someone us napped (me) and others swam! 😋 @picnicbox Has such delicious food and great vegan options! This kept me full and energised for our walk through the Brick Bay sculpture park! 🌱🌞🌸 #picnicbox

Only my second time visiting Crystal Castles but this place never disappoints. It’s so beautiful, lively and humble. Walking through the lush tracks, looking upon the beautiful crystals and connecting with a different realm. It feels nice.

Vegan Loaded Hashbrowns 🙌 with aquafaba cheddar—check my highlights for details about that if you're curious—poblanos, broccoli, mushrooms, green onion, & golden yukon hashbrowns. Top with generous amounts of hot sauce for best effect ✨ I'm partial to Cholula or Green Tabasco for these for purely sentimental reasons from my grandma's resturant. .
Loaded Hashbrowns are staple on my menu plan as a great way to use things up at the end of the week, and they're totally customizable per family member too. Which basically means they just eat hashbrowns most of the time—mayyybe just some cheeze or ketchup if they're feeling particularly adventurous. But we're all totally pleased with our breakfasts, so 🤷 I'll just keep sharing with y'all 😂 #veganornot
