Vegan options a plenty here, I had ‘fish’ and chips with minted peas. The ‘fish’ is tofu wrapped in Wakame for the fish flavour, deep fried in batter. Not only are the the vegan options creative they have a huge list of SFV desserts.
CHILI SIN/CON CARNE is a great way to introduce some legumes into your diet. Are you a fan of pesto? I certainly am! These interesting looking slices are in fact roasted butternut squash, topped with vegan pesto + quinoa + avocado + toasted pine nuts 🥑🍋 I got this idea from one of my housemates and it’s so damn good - try it and thank me (or her!) later 😜

4 frozen bananas, 1 tbsp of cacao powder, a splash of coconut water and 1 scoop of #Pranaon Vanilla Créme Protein Powder. Blend in high speed blender and serve with fresh fruit, peanut butter and vegan granola 💚 Enjoy

Last night’s dinner and tonight’s leftovers #lazytimes - Roasted smashes potatoes with bean and veg chili, avocado and fresh parsley from our garden, which miraculously hasn’t died yet #cangrowherbs I have a recipe for the chili somewhere on my blog if you feel like searching for it. I usually serve it with mashed noochy potatoes but I couldn’t be assed peeling / chopping / mashing yesterday so I just roasted the spuds instead 💁🏻♀️🥔 #vegan#burritobowl#veganchili#avocado#instafood

Made some pad Thai-inspired stir-fried noodles. I used some rice noodles because I love the chewy and sticky texture it has especially if cooked right. I’m sorry I didn’t measure the ingredients for the sauce (I will next time!) but for those wondering, the sauce was a mix of some chili sauce, coconut sugar, soy sauce, a little vinegar, sesame oil, and garlic.
For the other ingredients, I just sautéed veggies I had on hand—purple cabbage, leeks, bell peppers, carrots, bean sprouts, and some tofu in a little oil before adding in a bit of the sauce and the cooked noodles. I added more sauce and sesame oil then stir-fried everything for a few more minutes. Finished it off with some fresh lime and lots of sesame seeds. 🌿🍜 •

...aaaaaand we’re back to blue today! We decided to switch it up with a smoothie bowl rather than #nicecream... It’s a bit too chilly for that today 😂 Made with two bananas, a handful of blueberries, 1/4 cup coconut mylk, a tbsp of vanilla coconut yogurt, and a tsp of blue spirulina @rawnice 💙 Topped with blueberries, vanilla sea salt chocolate, and pumpkin seed butter #nomnomnom. Ps Happy Hump Day 🙊
Harper’s first night at home was a little rough, but we made it through with help from Auntie Ruth! I’ll be in dire need of a nap today, that’s for sure.
