Why, yes, I did just roast a pan of butternut squash at 7:30 at night so I could have it with my evening snack. That’s totally normal, right? Butternut squash roasted in a little olive oil, tossed with cinnamon and sea salt. Topped with @siggisdairy vanilla skyr, @traderjoes mixed nut butter, and my favorite granola from @purely_elizabeth (original ancient grains). So good!
